Scanpan Professional is made from a core of solid squeeze-cast aluminum, forged into shape with 200 tons of pressure. The optimum thickness of the pan base prevents warping and keeps the pan base perfectly flat, especially important when used with glass top or ceramic ranges. The patented nonstick surface is created by firing a ceramic-titanium particles into the pan and a specially formulated nonstick compound is embedded in the ceramic-titanium surface. I was so over Calphalon, the non-stick peeling up. I would send them back and get a new one under warrantee, which was really nice, but I was tired of paying the shipping to be honest and it seemed like within a few months the stuff was peeling up again, despite extensive effort to clean it and use it in the gentlest of ways. I am a fan of eggs, I eat two every morning for breakfast. I tried so many things and didn't like that my food was getting these chemicals off the pan. I did a ton of research which led me to try Scanpan. THIS IS THE PAN!!!! LOVE IT!!!! Cooks eggs beautifully and has held up great. Love that it's so food safe with the nonstick surface. (get the pan nice and hot before putting the eggs on so they will flip better and not break up if you like them over easy). It really is NON stick and easy to clean! Remember to follow the instructions of preheating on medium heat and do not use nonstick cooking spray. You can use oil or butter, but it's really not necessary. My only minor complaint is that the sides of the pan are not very high, so sometimes when stirring, things can go over the sides. Altho I have only used it a few times, and so far haven't used metal utensils (which are supposed to be OK), it is truly non-stick, easy to clean, and easy to handle. I am careful to follow instructions for before use and cleaning after use.Only negative, which is my own fault, is I would like a frying pan w/ a little higher sides to make larger portions of stir fry type meals. This is more for meat, omelettes, etc. I will likely buy more of these as my budget permits. |
