I've used it for high temp stir fry, searing, sauces and recipes that require finishing up in the oven. I followed the directions on the first seasoning and care instructions and have not had any finish degradation at all. So I was litlle skeptical that this wok would be any different --- I was pleasantly surprised. I have used it a number of time with fabulous results. The non-stick surface is great!I highly recommend being careful about the oil you use --- I typically cook with EVO, but for high temp cooking, use something like peanut oil. Stirfrys turn out resturant quality! I am particularly pleased with the see-through lid - perfect for steaming or watching quick-cooking items. Amazon offers one of the best prices that I've seen for Caphalon, too. However, the interior coating is easily scratched but using nylon spatula. I sent mine in for a replacement. The new one I received has exactly the same problem. It leads me to believe that the whole product line has the same quality. I would recommend for a $17 14" Carbon Steel Wok from Walmart. It is non-stick when seasoned correctly. I've been using one for three months now and it is very nice. I owned at least two sets of Calphalon cookware. Both are their high end product lines. The quality is going downhill and the price remains high. |
