A tight lid would prevent access by tiny lifeforms (such as small ants). More importantly, fat oxidizes and becomes rancid and the rapidity with which this happens depends upon air circulation. I suspect my mother's aluminium grease keeper was better at preserving fat because it had a tight seal to both the filter, which contained tiny holes that would be sealed by cooled grease, and a lid, both of which sealed tightly. It holds just a hair more than a quart, so if you store your grease in fruit jars in the fridge, don't fill the can to the top first. the screen is fine enough to catch almost all of the junk but course enough for good flow. The front of the can has a pour spout, and of course it is all stainless steele, no aluminum here. defenately worth the price |
