Lodge Color Porcelain Enamel on Cast Iron cookware is cast from molten iron in individual sand molds. The porcelain surface eliminates the need to season cast iron. This 7.5 Qt Enamel Dutch oven is great for cooking, marinating, refrigeration and freezing. The color porcelain enamel on cast iron can be used on gas, electric, ceramic and induction cooktops, as well as in the oven. Not recommended for use on outdoor grills or over open outdoor flames. Not for use in microwaves. The cast iron vessel has superior heat distribution and retention, evenly heating bottom sidewalls and even the lid. Tightly fitting lid seals in moisture. The excellent heat retention reduces the amount of energy needed for cooking. Two layers of very hard, glossy porcelain enamel are chip resistant and easy to clean. Lid knob is oven safe to 400 degrees Fahrenheit. The black rim on the pot is matte porcelain, not exposed cast iron. Hygienic porcelain enamel is non-reactive with food. Although dishwasher safe, hand washing with warm soapy water is recommended to preserve the cookware's original appearance. 12" diameter, 4 3/4" deep. Caribbean Blue. Imported.

I have been wanting the 7.5 quart dutch oven for quite a few months but had almost given in and bought the 6 quart for myself. I love Christmas!I've been researching the cast iron dutch ovens for quite a while and am so glad I received a Lodge (it ranks very highly on several product reviews including Cooks Illustrated). I love The Caribbean Blue color and also appreciate that the black edges around the dutch oven and lid are a matte porcelain finish, not bare cast iron like I first believed. I cooked an 8 pound standing rib roast in this on Christmas night. It cooked perfectly - nice, even heat; browned wonderfully. And I could not believe how easily it cleaned up with warm water, soap and a plastic mesh scrubber. It is heavy (I have to use both hands to lift it even when it is empty) but to me it is worth the extra weight to have JUST the right... It seemed like a good value. However, after the second use, the enamel began to chip off. One piece cut my finger before I noticed it. I washed the pan by hand, so I can't see any reason for this problem other than the enamel is defective. I returned it to Amazon immediately. You can have a whole set of this fine product for one piece of the pricey French cookware.Ours goes from a glass cooktop and electric oven to a classic wood cookstove, and is at home in either hot spot.
